Try Eating a Rainbow This Week!

Did you know that March is National Nutrition month?  To celebrate, the Chatham County Public Health Department is working with Moncure and JS Waters Schools on an event called Eat a Rainbow Week, to be held from March 16th to March 19th 2010.

If you are part of the Moncure or JS Waters school community or if you just want a fun way to encourage your family to eat healthy, why not join in and eat a rainbow?!  Try packing healthy, colorful snacks like carrot sticks, grapes, celery sticks or apple slices, and creating colorful salads to accompany your lunches and dinners.   This is also a great opportunity to try a fruit or vegetable that you never have before or see what colorful local produce is in season.

The days and their theme colors for Eat a Rainbow Week 2010 will be:

Tuesday, March 16th: Orange/yellow
Try carrots, oranges, bell peppers or mangoes!

Wednesday, March 17th: Green
Try celery, broccoli, greens, pears, or kiwis!

Thursday, March 18th: Red
Try apples, strawberries, radishes, or beets!

Friday March 19th: Blue/Purple
Try grapes, eggplant, blueberries, or blackberries!

And even though it doesn’t have its own special day during the week, it’s also important to eat white fruits and vegetables like bananas, cauliflower, potatoes, and onions.

With questions, comment, or to get your school involved next year, contact Ellie Morris, School Health Liaison with the Chatham County Public Health Department at 919-545-8514 or elizabeth.morris@chathamnc.org.
